Saturday and Sunday, 21. & 22.11.2020 Brig - Disentis - Brig

Enjoy a journey par excellence, which combines a gourmet & wine experience with a train journey. During your return journey from Brig to Disentis, enjoy an 8-course gourmet menu prepared by a star chef (tba). The menu is accompanied by the finest of wines of a local winery based. In Disentis there will be an hour-long break where you can enjoy a concert. 

Get on the train in Brig at 11 am and enjoy a day of culinary delights. During the journey from Brig to Disentis and back, you will be pampered with an 8-course gourmet menu by a star chef from the region. The menu is accompanied by the finest wines from a Valais winery. With each course we will serve you a wine to match the dish. Arriving in Disentis, you will proceed to the Benedictine monastery, where a concert will provide musical entertainment. On the way back, the culinary tour continues until you arrive back in Brig shortly before 7 pm.

Our 2020 chef: Norbert Schwery from "Gaumenzauber"

Let Norbert Schwery, a former member of the Swiss National Cookery Team, cook specially for you this year.

Born into an innkeeper's family, it was clear from an early age that Norbert would one day become a chef.  Before starting his apprenticeship, he trained as a confectioner in Bern at the Beck Glatz Confiserie. After completing an additional apprenticeship as a chef, he travelled around briefly at home and abroad before he and Irène, his wife, started a family.

As a member of the Swiss National Cookery Team, Norbert Schwery celebrated many successes. Together with the Rhone-Chefs, he won a silver medal at the 2004 Culinary Olympics in Erfurt and gold medals at the Igeho 2007 and Zagg 2006.

After successful years as landlord of the Schlosskeller Restaurant in Brig, Norbert Schwery and his wife founded the catering and party service "Gaumenzauber" (palate magic)  in 2007 and he now cooks his way through the whole of Oberwallis.

He has even cooked for Federal Councillors: the festive banquet in the Simplon Hall  in Brig, which was part of the Federal Council reception for Viola Amherd, was orchestrated by Norbert Schwery. In his own TV programme on TV Oberwallis, Norbert Schwery whisked viewers away to a world of culinary magic.  With recipes for ‘Valaisan Choscht’ – local and seasonal dishes –  fine festive menus and many other culinary highlights, he always offers plenty of tips and tricks that viewers can easily replicate and cook at home.

Star chef Klaus Leuenberger (Erner Garten) cooked for the guests. The Cave Biber winery supplied the wines to go with the gourmet menu. In the monastery church in Disentis, two generations of the Steiner family from Brig enchanted our guests with music and unusual sounds.

Star chef Mario Inderschmitten (Pension Albrun, Binn) cooked a fantastic menu for the guests. The Rhodan Winery supplied the right wines for the gourmet menu and in Disentis URSINA, the Swiss singer-songwriter, enchanted with her voice again this year.
